Pea and Pumpkin Soup with fried onions


For 4 portions:

1 onion, chopped fine
2 Tbsp. oil
1 Liter of vegetable broth, unsalted, or water
250 gr. dried green peas, soaked overnight in water
250 gr. Hokkaido pumpkin, cut in cubes
250 gr. potatoes, cut in cubes

Spices: salt, pepper, 2 bay leaves, marjory, lovage and instant vegetable broth

Brown the onions in the oil for 3 minutes.
Add the unsalted vegetable broth. (If it is salted, the peas might not get soft.) Add the bay leaves, and the green peas. Simmer for 35 minutes. Add the potatoes and pumpkin and simmer for another 15 minutes.When the soup is done, add the spices. Blend about 1/3 of the soup and add to the mixture to make it creamy.

Cut two onion in rings. fry them in vegan butter for 10 minutes. Do not let them burn! Add to the soup.

This is a hearty soup for the fall or winter.
