Cauliflower and semolina soup


1 small cauliflower, simmer the pieces for about 15 minutes in salt water.
Heat 1 Tbsp. of vegan butter in a pot and add 40 gr. of semolina. Let it brown while stirring constantly. Add 1 1/2 ltr. of vegetable broth and simmer for 10 minutes. Grate or puree one small onion. Mix all ingredients together and then use a potato masher. Add pepper, salt and nutmeg to taste. Finally, add 100 ml of vegetable cream.
