Potato wedges (served with tofu scrambled eggs and red beet salad)
1 kilo of small potaotes
1 tsp. paprika
1 tsp. salt
2-3 Tbs. oil
Wash the potatoes throughly-do not peel.
Put them in a pot of water with salt and boil them for 10 minutes.
Drain and put them back in the pot and let the remaining fluid evaporate.
Preheat oven to 200 C/390 F
Put the salt, paprika and the oil in a bowl. Add the potatoes. Mix well. Spread the potatoes on a cookie sheet and bake until crisp, about 15 minutes.
